Camellia
Family - Theaceae
There are 250 species of Camellia. Originating from China, Korea and Japan, is old: it was grown in 2000 BC in China. The Buddhist monasteries were known to have grown the Chinese Camellia - which has the largest flowers - in the 10th century. In the late 1500's, it was introduced into Europe and in the 1700's, it made its way to England.
When the leaves of the Camellia sinensis are oxidized (or fermented), they turn dark brown or black. It is from this we get our black tea. It can be blended easily with other teas or flowers (eg lavender). Lapsang suchong is black tea infused with a pine needle scent. Earl Grey is infused with bergamot essential oils.
Black tea is a diuretic; also, its antioxidants increase circulation and reduces fatigue.
Only fresh young tips are picked for white, green, oolong and black teas.
