Gypsophila paniculata
Family : Caryophyllaceae (carnation)
We are familiar with these tiny, airy flowers on their slender stems in our ornamental floral arrangements. Surprisingly, these teeny, delicate flowers have a large taproot, similar to that of a dandelion!
Symbolically, these flowers mean an everlasting and undying love, which is why they are so popular in wedding bouquets. They also mean Innocence and purity; hence, the popularity of their use with newborn babies.
There are a number of species of this annual, or perennial, herb, and they are used for more than floristry. They are also used in herbal medicine, for food (used in halva, liquors, cheese and ice cream), in producing film, and in soaps and shampoos.

One day it occurred to me that while I liked to have this dainty flower in my vases, I really didn't know much about it. It turns out this delicate, tiny bloom is really quite hardy ... and far more useful than just an airy 'filler' in floral arrangements.
