In days past, potpourri wasn't purchased in a plastic bag at a store, or scented with chemicals that fade so quickly within a few days there is none at all. Instead, pride was taken by gardeners who carefully gathered their fragrant blooms; if their use was for potpourri, it was expected for last for several years!
Fragrant Moist Rose Potpourri
10 c. partially dried highly scented rose petals
About 3 c. coarse salt
2 T. ground cinnamon
2 T. ground allspice
2 T. ground nutmeg
1 T. ground cloves
5 T. powdered orris root
Few drops of essential rose oil
Red petals were specified as being preferred here, but since this recipe can also be used for other scented flowers as well, I'm sure if the rose has a strong fragrance, it will work here , too.
Partially dried petals will be leathery. Layer them with the salt in a large bowl, then weight them down. Stir them every day, draining off any moisture there might be. Anywhere from 3-6 weeks, crumble the mixture, add the spices and the essential oil. Seal in paper bags and cure for about 6 weeks before using. The colour will be brownish, but the scent should be delicious and last for some time. If this is used in a bowl, the potpourri can be covered with some some bright dried - or fresh - roses.
