Camassia quamash

Family : Asparagaceae [some sources: Liliaceae]

This meadow spring wildflower with blue violet star-shaped flowers is native to Canada and the United States, found along the Pacific Northwest coast and east into Idaho. Six species of Camassia are recognized in North America.

Long treasured by the First Nations people, celebrations are still held for this diet staple. It was a cherished plant for cooking, high in food value. The sweet bulbs, when dry-roasted or baked, yield the carbohydrate inulin, which is converted to fructose as it cooks.
